Food for Thought

Actually, food for eating. On Super Sunday, 2021 I felt like something other than the simple bagel or toast that usually suffices for breakfast. The day before, we had smoked a tri-tip for dinner and had a fair amount left over. Years ago, we were introduced to Machaca by a nice waitress in a little hole-in-the-wall restaurant in Calexico and have since ordered it from a wide array of restaurants and cafés as well as making our own versions. It isn’t a meal we prepare all that often, but once in a while when we have enough leftover meat and a bell pepper on a weekend morning, it becomes Machaca Day. Breakfast prep became a photo shoot and I spent some time in Photoshop prepping a little DIY Machaca recipe. The ingredients are simple and except for a recommendation of two eggs per serving, the measurements are open to interpretation by the cook. Some call it “guessing”.
